The Cerimito
Ingredients: for six ceremiti: 1 kg flour, 200 g walnuts, 5 tablespoons olive oil, 4 tablespoons sugar or honey, 2 tablespoons anise seeds, the two oranges grated rind, 3 eggs, 25 g brewer's yeast dissolved in warm water and a pinch of pepper and salt.
Preparation: place gradually the flour and add little bye little all the ingredients and knead like bread. Let rise for about two hours and with the dough forming cylinders of 40 cm with a diameter of 2,5 cm. Take the ends of the cylinders and after aligned them roll up like ribbon for three or four times taking care to leave on top a big loop. Bake at 180°.
Interesting facts
Cerimito (or Ceremito), is a local Easter cake typical of Riese community. It was custom, no more in use, that in the towns of Rio Marina and Rio nell'Elba, the Riese young man, on the morning of Palm Sunday, did reach to his lover a basket full of flowers with the ceremito (or cerimito) inside, male Easter cake.
If the girl accepted the present and then the man's love, for Easter she sent to him a blessed Sportella with a ribbon round it.
