The Panficato
Panficato recipe changed a bit when the americans brought chocolate on the island, after the end of the second World war. Nowadays it’s a typical christmas cake, but actually in the past panficato was a cake eaten everyday at home, because it was a natural energy, sugar and carbs supplement. Panficato can be baked with ingredients found in the countryside of Elba island: figs, fennels seeds, honey.
Ingredients: 300 gr of dried figs, 200 gr of almonds, 25 gr of pine nuts, 30 gr of candied orange, 50 gr of cocoa powder, 300 gr of pears and apples softened in liquor, 300 gr of walnuts, 300 gr of raisins, 15 gr of cinnamon, 200 gr of all purpose flour, 100 gr of vanilla sugar or regular sugar, 150 gr of dark chocolate.
Process: peel walnuts and almonds, chop raisins, boil figss in water and wine adding two bay leaf leaves to add some flavor. Let them cool completely, blend them with a blender and add all ingredients. Mix them all in a bowl, and then shape small flat buns just like you do for panforte. Take some aluminum foils and sprinkle them with flour, then place the buns over them. Put them in the oven and bake them for 20 minutes on a medium heat, and rise the temperature for the last 15/20 minutes.
