Black olives with pesto

 Ingredients:   400 g black olives, a few sprigs of fennel, garlic, chili pepper, salt, extra virgin olive oil.

Preparation:   dry the ripe black olives, leaving them under the sun for a few days, or put them in the oven it is more quickly. Once shriveled, blanch them in hot water for a few seconds and leave them to dry on a towel.
Prepare a pesto with garlic, fennel, chili pepper and salt. Add the pesto sauce with olives and place all in a glass jar or crock finishing with another sprinkling of pesto obtained with a tablespoon of extra virgin olive oil.
