We always have to remember that quality wine is an alive and delicate product. Having said that, it’s important to pay attention to a significant step that it’s often neglected: when we talk of bottles storage, the importance of humidity is rarely pointed out, only the right temperatures are mentioned. In storage rooms however, it’s also very important to check the humidity level , that should never be lower than 70-75%. On the other hand, a too high humidity level hasn’t got any drawbacks, but it can wet and damage labels, that’s why it could be wise to wrap bottles in plastic wraps.
In case of long aging, it’s usually accepted the temperature has to be constant as much as possible, with no jumps and ideally between 10 and 15 C°. therefore when storage room with this temperature and humidity level aren’t available, it’s necessary to go on with small supplies, increasing the number of purchases for the supply. To create the perfect storage environment , in the last few years we’ve seen the growth of useful air conditioned refrigerated showcases in restaurants, wine bars, wine houses and also in private houses.
When temperatures are kept very low for white wines, rose wines and sparkling wines, exceeding tre or four weeks of fridge storage could be damaging: let’s think of some restaurants where white and sparkly wines are served almost frozen, kept in very low temperature cellars for whole months, serving a totally dull wine to customers, sometimes damaged by a very dry cork due to inadequate humidity.
